Coconut Blueberries Surprise Muffins!

Had a spare few hours today before I go into work and thought Iwould come up with something yummy to bring to noosa this weekend. I had some coconut flour that has been sitting in my pantry for months and thought i'd give it another chance (other times muffins are to dense and cakey!)


Ingredients

1/4 cup coconut flour
1/4 cup raw cacao powder (or cocoa)
1/2 tsp salt
1/2 tsp baking powder
1 tsp vanilla essence
1/3 cup honey or maple syrup
1/4 cup coconut oil
1/2 cup frozen blueberries (raspberries would work great too)
3 flax eggs (1:3 flax to water whisked)
1/2 cup jam of your choice (I used raspberry)


Directions
Heat oven to 180 degrees C
Whisk together together dry ingrediants
Add wet ingredients (but not berries) stir until mixed
Fold in the blueberries
Grease muffin tin and fill 1/3 with batter
Then add a teaspoon of jam and fill with batter until muffin hole is 2/3 full.
I sprinkled a few sunflower seeds and pepitas on top, but it is up to you!
Bake for 20 minutes (or until toothpick comes out clean) and cool on cooling racks.

Protein Pancakes

This is my favourite recipe EVER..unfrotunately I havn't mader them in a while because the contain gluten and dairy, and boy do I miss them! They have the perfect ratio of macronutrients for after a workout- protein, complex carbs and healthy fats and they still taste amazing.

Ingredients

1/2 cup of oats (instant works best)
1/2 cup low fat cottage cheese
1/2 cup egg whites (usually 3 egg whites is enough)
1/2 packets of stevia
1/2 Tsp Vanilla or Coconut essence

Directions

Add all ingredients to a blender and blend until smooth
If consistency is too liquid, add a little more oats, sometimes you just have to play around with it :)
Pour into a frying pan and flip when more than half of the pancake is filled with air bubbles!

How you serve this pancake is really what makes it..
My favourite is Banana, blueberries,raspberries, trail mix (w/ cranberries) and honey!

 

A hump day dessert!!

Ok so..sundays are normally my day to relax a bit on my diet, and find something yummy but still nutritious to feast on! This weekend just gone, i had a massive craving for a Banana Split!...However its hard to have one when you are avoiding dairy..but there is ALWAYS a way around something to get what you want...so this is what i came up with..

Ingredients

Split
1 Small banana
Cinnamon
2 Tsp Honey
Coconut milk icecream (which ever flavour you desire!)
1 Tbsp dry roasted organic peanuts 

Sauce
1 Tsp coconut oil
1 Tsp peanut butter

Instructions
Preheat oven to 180 degrees C
Line a baking tray/dish with alfoil
Slice banana in half, dust with cinnamon and drizzle honey all over
Place in oven for 10 min, or until golden brown

In the microwave heat the coconut oil and peanut butter for 30 min and stir together

Scoop icecream onto banana split, drizzle peanut sauce and top with peanuts or other toppings like..100&1000's, cacao nibs, nuts or shredded coconut!

Black Bean Brownies and Buckwheat Crowns!

I am always looking for new baking recipes that are healthier than normal! On Friday I was visiting my family on the coast, and because my sister is allergic to the majority of the food pyramid, I love nothing more than trying to figure out yummy recipes that fit into her diet. So the main thing I was looking for this lovely friday afternoon was- NO Gluten, Dairy, Eggs and my favourite..no refined sugar!

All Ingredients in my recipes are pretty easy to fined, however most you won't find at your general supermarket. You will have to look around at health food stores like Mrs Flanneries or Healthy Life

I decided to try 2 recipes which fit into both of these categories...Brownies and Cookies..

The first recipe is for Brownies made with black beans...yes you read it correctly..beans! Dont worry..you would have had NO idea these contained beans, they were so rich and fudgey!

Blend together all wet ingredients in Food Processor or Blender

1 can cooked black beans (I'd say any beans would work)
2 flax eggs *(see note)
Carob syrup (3 Tbsp carob powder blended with 2 Tbsp Honey/Agave & 2 Tbsp water)
1/4 cup honey/agave
1/4 cup brewed coffee
2 tsp vanilla
1/3 cup melted coconut oil

Sift together, then mix into wet ingredients

1/2 cup raw cacao powder
2 tbsp arrowroot powder
1 tsp cinnamon

Mix in

1/4-1/2 cup of dark chocolate

Grease and dust a small cake tin with coconut oil and bake in a 180degree oven for 20-25 minutes or until knife comes out clean.

These taste even better out of the freezer! Sort of like rich dark chocolate ice cream squares.

Hoping they dont taste how they look here!

(* A flax egg is 1 Tbsp of ground flax seed wisked with 3 Tbsp of water and left for 2 minutes)

aaannndddd the end result

Next up was BUCKWHEAT CROWN COOKIES!


Ingredients
1 cup of buckwheat flour
1/4 cup of ground flax seed
2 Tbsp coconut sugar
1 Tbsp ground cinnamon
1/2 tsp vanilla
1/4 cup water
1 flax egg (1 Tbsp flaxmeal mixed with 3 Tbsp water)
3.5 Tbsp melted coconut oil
1 Tbsp almond butter

Directions
Preheat oven to 200 Degrees C
Combine all dry ingrediants first and then mix in wet. Mix together with your hands and roll out (1/4 inch thickness ) on a dusted cutting bored with a rolling pin.
Baked for 10 minutes :)

The final result!
